Vegan Pumpkin Cookies

I've raved about these things several times, and as I was making them to finish off the can of pumpkin I had in the fridge, I figured it was time to post the recipe.


Vegan Pumpkin Cookies

1 cup unbleached sugar
1 cup canned pumpkin
1/2 cup vegan shortening
2 cups unbleahed flour
1 tsp baking powder
1 tsp backing soda
1 tsp cinnamon or pumpkin pie spice
1/4 tsp salt

Heat oven to 375F. Mix together the sugar, pumpkin and shortening. Add the rest of the ingredients. Drop by teaspoonfuls onto an ungreased cookie sheet and bake until light brown (8-10 minutes). Makes about 4 dozen.

There's also a recipe for frosting, which I've never actually used, but I'll post it here for good measure.

1/4 cup (nucoa) margarine
2 cups powdered sugar
1 tsp vanilla
1-2 tbs soy milk

Heat margarine in saucepan over medium heat until delicate brown. Stir in the rest of the ingredients, except for the soy milk, which you add little by little, making it the consistancy you desire. Alternately you can cheat and do it in the microwave.


The cookies are really easy to make, and if you have the ingredients it only takes 5 minutes or so to make the batter.
